So, I have taken an interest in cooking. I love it so much. I have decided I will let you guys in on my recipes of the evening…that is when I cook. 

Tonight’s Menu

Hearty Potato and Leek Soup w/ Roasted tomato and Salami Crostinis

Hearty Potato and Leek Soup

  • 5 large red potatoes (peeled and cubed)
  • 3 leeks (cleaned and sliced thin)
  • 2 tbsp butter
  • 2 stalks of celery
  • 1 carrot
  • 1 veggie bouillon cube
  • 1 cup half and half
  • 6 cups of water
  • dash o’ salt 
  • lots’ o pepper

In a medium size skillet add your butter and heat that up then throw in your leeks. I browned my leeks a little then turned the stove down a touch and just let them sit there in the butter getting all nice and soft, while I cleaned and diced up my potatoes. Next fill your stew pot with the water and throw in your bouillon cube and let that come to a boil. when that is nice and hot throw in those leeks that you had simmering in the skillet, and next throw in the potatoes. add your salt and pepper. Let that simmer in the pot for about half an hour or until your spuds are nice and tender. then take the potatoes out in batches and put those cube potatoes in a bowl. now, just mash the heck out of those potatoes. then put them back in the pot and grab another batch. do this till you have all the potatoes pretty much mashed. Remember you don’t have to be perfect. It is the imperfections in cooking that make it your’s! After all that mashing throw in your celery and your carrots. let that just sit there cooking while you enjoy some wine. now once you carrots and celery have softened add your half and half and let that simmer just a little longer. add more salt and pepper to your liking and there you go! Hearty Potato and Leek Soup!

Roasted tomato and Salami Crostini

  • baguette 
  • fresh goat cheese
  • roasted tomato in oil
  • salami

Cut the baguette into several thin slices. not to thin as you will end up breaking all of your crostini later when you are putting on your cheese. Bake the slices for five min. at 300 degrees. then flip them and set your oven to broil. let the bread brown for another couple of min. never take your eyes off them because they will blacken quickly. next, take the bread out of the over, cool then spread on your goat cheese, top with a small sliver of salami and top it off with a roasted tomato! Perfection!

Hello again

So it has been awhile. I have been up to no good as usual. having all sorts of fun in dallas. Let’s see…I quit my shit job. I am now poor as fuck. I have two dogs that I indeed need to support but hey, at least they let me share their dog food! 

All in all things are good. I believe that I have decided what I want to do when I grow up and that is a very crucial thing to know by now. I have decided I want to be an Assistant Director. If you have ever been on a set, I want to be the person that yell shit and tells people what to do. I also get to cuss at work which is one of my favorite past-times. 

I wish I could find a job where I got paid to drink and yell obscenities at people. I love doing that and all this time I am doing it for free.
